Homemade Baked Beans on Toast

INGREDIENTS:

  • 2 cans of cannellini beans

  • 1 tin diced tomatoes

  • 1 tbsp finely diced red onion

  • 1/4 tsp smoked paprika

  • 1/4 tsp oregano

  • 2 tsp balsamic vinegar

  • 1 tsp maple syrup

  • Toasted sourdough or bread

  • 1 tsp of chopped parsley (optional)

METHOD:

  1. In a medium - low heated saucepan, add a splash of olive oil.

  2. Add the onion and saute for 30 seconds.

  3. Add in the beans and herbs and cook for another minute or 2.

  4. Now add in the tomatoes, balsamic and maple syrup. Mix well and simmer for 10 minutes. Add a splash of water if needed.

  5. When cooked stir through the parsley.

  6. Serve on toast.
