Baked Vegetable Gnocchi

INGREDIENTS:

  • 1 head of broccoli, florets cute

  • 1 red capsicum, sliced

  • 1 small zucchini sliced

  • 250g cherry tomatoes

  • 1/2 red onion, sliced

  • 2 garlic cloves, finely diced

  • 1 1/2 tbsp olive oil

  • 1 tsp thyme

  • 1 tsp oregano

  • 1/2 tsp salt

  • Crack of black pepper

  • 500g gluten free gnocchi

METHOD;

  1. Preheat the oven to 180 degrees C and spray a baking pan.

  2. Ina large bowl, add the veggies (except the tomatoes), herbs, oil and salt. Mix well to combine.

  3. Heat up a frypan and fry off the veggies for 10 minutes.

  4. Add in the gnocchi for a further 5 mins.

  5. Remove from heat and add tho the baking pan.

  6. If you are using feta, sprinkle over the top along with a drizzle of olive oil and the cherry tomatoes. Mix through.

  7. Bake in the oven for 10 minutes.

  8. Best served fresh.

    *garlic bread goes well with this dish.
