Baked Vegetable Gnocchi
INGREDIENTS:
1 head of broccoli, florets cute
1 red capsicum, sliced
1 small zucchini sliced
250g cherry tomatoes
1/2 red onion, sliced
2 garlic cloves, finely diced
1 1/2 tbsp olive oil
1 tsp thyme
1 tsp oregano
1/2 tsp salt
Crack of black pepper
500g gluten free gnocchi
METHOD;
Preheat the oven to 180 degrees C and spray a baking pan.
Ina large bowl, add the veggies (except the tomatoes), herbs, oil and salt. Mix well to combine.
Heat up a frypan and fry off the veggies for 10 minutes.
Add in the gnocchi for a further 5 mins.
Remove from heat and add tho the baking pan.
If you are using feta, sprinkle over the top along with a drizzle of olive oil and the cherry tomatoes. Mix through.
Bake in the oven for 10 minutes.
Best served fresh.
*garlic bread goes well with this dish.
