Omelette Roll

INGREDIENTS:

  • 2 eggs

  • 1 tbsp of milk of choice

  • 1/4 cup diced tomato

  • 1/4 cup sliced mushroom

  • 1/2 cup spinach

  • 1/2 tbsp chopped chives

  • Salt and pepper

METHOD:

  1. Spray a medium to low heated frypan with oil.

  2. Add in the mushroom and tomato and cook for 3 minutes.

  3. While this cooks, whisk the egg, milk and chives together and season with salt and pepper.

  4. Scoop the mushroom mixture into a bowl.

  5. Evenly spread over the egg mixture into the pan, ensuring it coats the whole pan.

  6. Sprinkle the spinach over the egg while it cooks followed by the mushroom mixture.

  7. When the omelette is just about cooked, lift up one side with a spatula and start to roll. Let it cook for another 30 seconds like this before sliding it onto your plate to eat.
