Moroccan Pita Pizza

INGREDIENTS:

  • 2 cups of diced pumpkin

  • 1/2 tsp cumin

  • Pinch of salt

  • 1 red capsicum diced

  • 500g lamb mince

  • 2 garlic cloves

  • 1 tsp rosemary

  • 1/2 tsp cumin

  • 1/2 tsp paprika

  • 1/2 tsp salt

  • 1/4 red onion sliced

  • Spinach

  • Goats feta

  • Tomato Paste

  • 4 GF Pitas

METHOD:

  1. Preheat the oven to 200 degrees C and line a baking tray with paper.

  2. Bake pumpkin and capsicum at for 20 mins

  3. While this roasts, add a dash of olive oil and the garlic to a medium-low heated frypan and saute for 1 minute.

  4. Add in the mince, herbs and salt. Cook until brown, breaking the mince up as it cooks.

  5. Spread the tomato paste over the pitas.

  6. Layer on the mince, pumpkin, capsicum, spinach, onion and feta.

  7. Lower the oven to 180 degrees C and bake pitas for 10 minutes.
