Lemon and Macadamia Biscuits

INGREDIENTS:

  • 1 1/4 cups almond meal

  • 1/4 cup melted coconut oil

  • 1/4 cup maple syrup

  • 1/4 macadamia pieces (plus some for topping)

  • Zest of 1 lemon

  • 1 tbsp lemon juice

  • Pinch of salt

METHOD:

  1. Pre heat oven to 160 degrees C and line a baking tray.

  2. Place all in ingredients into a mixer and mix for 5-10 seconds.

  3. Scoop out around 2 tbsp of mixture into balls and place onto the baking tray.

  4. Using a fork, gently press down the biscuits.

  5. Press a piece of macadamia into the middle of each.

  6. Bake in the oven for around 12-15 minutes or until slightly golden.

  7. Remove and let cool.

  8. Store in an airtight container.
