Lemon and Macadamia Biscuits
INGREDIENTS:
1 1/4 cups almond meal
1/4 cup melted coconut oil
1/4 cup maple syrup
1/4 macadamia pieces (plus some for topping)
Zest of 1 lemon
1 tbsp lemon juice
Pinch of salt
METHOD:
Pre heat oven to 160 degrees C and line a baking tray.
Place all in ingredients into a mixer and mix for 5-10 seconds.
Scoop out around 2 tbsp of mixture into balls and place onto the baking tray.
Using a fork, gently press down the biscuits.
Press a piece of macadamia into the middle of each.
Bake in the oven for around 12-15 minutes or until slightly golden.
Remove and let cool.
Store in an airtight container.
