Slow Cooker Pea and Ham Soup

INGREDIENTS:

  • 1.5kg ham hock

  • 1 small onion, finely diced

  • 2 large garlic cloves, finely diced

  • 1 large carrot, peeled and diced

  • 2 celery stalks, diced

  • 1 cup cauliflower (I needed to use it up and it worked very well)

  • 2 bay leaves

  • 500g green split peas

  • 2 tsp bone broth (optional)

  • 8 cups water

  • Salt and pepper (season lightly)

  • Chopped parsley to top (optional)

METHOD:

  • Add all ingredients into the slow cooker and cook on low for 8 hours.
