On The Go Brekkie Muffins

INGREDIENTS:

  • 1 medium ripe banana

  • 1 egg

  • 1/2 cup coconut/almond milk

  • 2 tbsp melted coconut oil

  • 1/2 cup frozen or fresh berries

  • 1 cup almond meal

  • 1/2 cup quick oats*

  • 40g vanilla protein powder*

  • 1 tsp baking powder

METHOD:

  1. Preheat your oven to 170 degrees C and grease a muffin tin (enough to make 4 large)

  2. In a bowl mash the banana until mostly smooth.

  3. Whisk in the egg.

  4. Whisk in the milk and coconut oil.

  5. Now add the dry ingredients into the bowl mixing well.

  6. Stir through the berries.

  7. Scoop mixture into prepared tin and bake for 30-40 minutes or until a skewer comes out clean.

  8. Let cool before removing from tin.
