Lamb + Veg Casserole
INGREDIENTS:
1 small onion, finely diced
2 garlic cloves, finely diced
2 heaps cups chopped cauliflower
1 small eggplant, diced
2 cups diced pumpkin
1 tsp cumin
1 tsp smoked paprika
1 tbsp rosemary
500g lamb steak, diced
2 cups passata
2 cup vegetable stock
1 tsp salt
Pinch of black pepper
METHOD:
Add all the ingredients into your slow cooker.
Cover and cook for 6-8 hours on low.
