Lamb + Veg Casserole

INGREDIENTS:

  • 1 small onion, finely diced

  • 2 garlic cloves, finely diced

  • 2 heaps cups chopped cauliflower

  • 1 small eggplant, diced

  • 2 cups diced pumpkin

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • 1 tbsp rosemary

  • 500g lamb steak, diced

  • 2 cups passata

  • 2 cup vegetable stock

  • 1 tsp salt

  • Pinch of black pepper

METHOD:

  1. Add all the ingredients into your slow cooker.

  2. Cover and cook for 6-8 hours on low.
