Mexican Meatballs

INGREDIENTS:

MEATBALLS:

  • 500g chicken mince

  • Salt and pepper

  • Zest of 1 lemon, juice reserved

  • 1 tbsp chopped parsley

  • 1/2 red onion, finely diced

  • 2 garlic cloves, grated

  • 1/2 red capsicum, diced

  • 1 tsp oregano

  • 1/2 tsp paprika

  • 1 can diced tomatoes

  • 2 cups chicken stock

  • 1/2 cup peas

  • 1/2 avocado

  • Greek/coconut yoghurt and Parsley to top

  • 1 cup of rice
