INGREDIENTS:

500g chicken mince
Salt and pepper
Zest of 1 lemon, juice reserved
1 tbsp chopped parsley
1/2 red onion, finely diced
2 garlic cloves, grated
1/2 red capsicum, diced
1 tsp oregano
1/2 tsp paprika
1 can diced tomatoes
2 cups chicken stock
1/2 cup peas
1/2 avocado
Greek/coconut yoghurt and Parsley to top
1 cup of rice
