Apple Pie

INGREDIENTS:

  • 5-6 granny smith apples peeled and diced, core removed

  • 1 1/2 tsp ground cinnamon

  • 8 tbsp melted coconut oil

  • 3 tbsp gluten free flour

  • 1/4 cup water

  • 1 cup coconut sugar

  • GF short crust pastry x 2 pieces (can use normal or vegan as well)

    *I made my own here but it was very fiddly

METHOD:

  1. Pre heat your oven to 180 degrees C and grease a pie dish (around 8 inch) or use mini ones like me.

  2. Add the apple into a bowl, sprinkle over the cinnamon and mix well.

    Set aside.

  3. In a sauce pan over medium heat, add the coconut oil and whisk in the flour, keep whisking for 1 minute.

  4. Whisk in the water and sugar and bring to a simmer whisking frequently for a few minutes.

  5. Pour the mixture over the apples and mix through.

  6. Place one piece of the pastry at the bottom of the pie dish.

  7. Add the apple mixture into the centre and spread out.

  8. Slice the remaining pastry into strips and layer of the top. Seal the edges using your fingers.

  9. You can egg wash the pastry to make it nice and golden.

  10. Bake for 50 mins - 1hr (slightly less if using smaller dishes) or until the apple is soft. Remove and let rest before serving.

  11. Serve with coconut yoghurt or icecream.
