Prawn, Pea and Lemon Pasta
INGREDIENTS:
300g uncooked prawns
Salt and pepper
Juice of 1 lemon
1/2 onion, finely diced
2 garlic cloves, finely diced
1 bunch of broccolini, ends trimmed
1 zucchini, halved and sliced
1/2 cup peas
270ml coconut cream
200g GF pasta
METHOD:
Cook pasta according to packet instructions.
Add a splash of olive oil to a medium - low heated frypan.
Add the prawns to the pan and season with salt and pepper and a squeeze of lemon juice.
Cook until prawns turn pink and set aside.
Add a splash more oil to the pan and add the onion, garlic and saute for 1 minute.
Add in the broccolini, zucchini and a pinch of salt and pepper. Cook for another 2-3 minutes.
Now add in the peas, coconut cream and another good squeeze of lemon juice and simmer for a few minutes.
Add the pasta, prawns, lemon zest and chopped parsley. Mix well and serve straight away.
