Prawn, Pea and Lemon Pasta

INGREDIENTS:

  • 300g uncooked prawns

  • Salt and pepper

  • Juice of 1 lemon

  • 1/2 onion, finely diced

  • 2 garlic cloves, finely diced

  • 1 bunch of broccolini, ends trimmed

  • 1 zucchini, halved and sliced

  • 1/2 cup peas

  • 270ml coconut cream

  • 200g GF pasta

METHOD:

  1. Cook pasta according to packet instructions.

  2. Add a splash of olive oil to a medium - low heated frypan.

  3. Add the prawns to the pan and season with salt and pepper and a squeeze of lemon juice.

  4. Cook until prawns turn pink and set aside.

  5. Add a splash more oil to the pan and add the onion, garlic and saute for 1 minute.

  6. Add in the broccolini, zucchini and a pinch of salt and pepper. Cook for another 2-3 minutes.

  7. Now add in the peas, coconut cream and another good squeeze of lemon juice and simmer for a few minutes.

  8. Add the pasta, prawns, lemon zest and chopped parsley. Mix well and serve straight away.
