Toad in a hole
GF* + DF* - serves 1
INGREDIENTS:
1 thick slice of GF bread or sourdough (buttered if desired)
1 egg
2 rashers of bacon
1/4 avocado
Fresh chives, finely chopped
Salt + pepper
Lemon juice (to squeeze over)
Sriracha sauce (optional)
METHOD:
Heat a frypan to a low-medium heat and spray with oil.
Cut a hole out of the bread and set aside.
Place the bread in the frypan and crack the egg into the hole. Cook for a few minutes each side or until egg is cooked.
While this cooks add the bacon and smaller piece of bread into the pan and cook until slightly crispy.
While the bacon is cooking, mash the avocado and season with salt, pepper and a squeeze of lemon juice.
Once the egg is cooked, place on a plate, add the bacon on top, chives and a drizzle of sriracha.
Spread the avocado onto the round piece of bread.
