Sweet and Sour Pork

INGREDIENTS:

  • 500g pork steak, diced

  • 3 tbsp rice flour

  • 1 tsp salt

  • 1/2 red onion, diced

  • 2 garlic cloves, finely diced

  • 1 yellow capsicum, diced

  • 1 broccoli, florets cut 

  • 1 cup rice

  • Sliced spring onion to serve

SAUCE:

  • 1/4 cup apple cider vinegar

  • 3 tbsp coconut sugar

  • 3 tbsp coconut aminos

  • 1 tbsp tamari 

METHOD:

  1. Add the pork into a bowl, sprinkle over the rice flour and salt. Mix so the pork is well coated and set aside.

  2. In a small bowl add the sauce ingredients, whisk together and set aside.

  3. Cook your rice according to packet instructions.

  4. While the rice cooks, Add 1 tbsp olive oil to a medium - low heated fry pan. Add vegetables and stir fry for around 3 minutes, stirring occasionally to prevent burning. Set aside once done.

  5. Add a little more olive oil and add the pork. Cook until browned.

  6. Turn the heat up slightly and add the sauce.

  7. Stir frequently until the sauce starts to thicken.

  8. Add the veggies back in and stir through to reheat before serving.

  9. Divide the rice, scoop over the pork and sprinkle over the spring onion.
