Aussie Pizza

GF + DF* - serves 4

INGREDIENTS:

  • 2 gluten free pizza bases (can use non GF)

  • Tomato paste 170g

  • 100g ham

  • 4 eggs

  • 1/2 avocado, sliced

  • 1 tomato, sliced

  • 1/4 red onion, sliced thinly

  • 1/2 cup sliced mushrooms

  • 2 handfuls of rocket

  • Salt and pepper

  • Cheese or DF cheese

METHOD:

  1. Preheat your oven to 190 degrees C and line 2 baking trays with paper.

  2. Heat a non stick pan and crack in the eggs. Cooking them until about 3/4 done.

  3. Evenly spread over the tomato paste over the bases.

  4. Layer over the tomato, ham, mushroom (can cook this with the eggs if you prefer), avocado, cheese and red onion (as much or as little as you like).

  5. Carefully place the eggs on top, two on each base and season with salt and pepper.

  6. Place in the oven and bake for 10 minutes.

  7. Once out, layer over the rocket.
