Curried Sausage

GF + DF - serves 4

  • 500g GF sausages, sliced

  • 1/2 onion, finely diced

  • 2 garlic cloves, grated

  • 1 carrot, peeled and cut into half moons

  • 1 cup sliced mushrooms

  • 1 cup peas

  • 1 tbsp curry powder (1/2 if kids don’t like it too strong)

  • 3 tbsp GF flour

  • 2 cups broth (beef or veg)

  • 1 tsp coconut sugar

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • Mash potato or rice to serve

METHOD:

  1. Add a splash of olive oil into a medium-low heated frypan.

  2. Add the onion and garlic and saute for 1-2 mins.

  3. Add in the sausages and brown.

  4. Add in the carrots.

  5. Add in the curry powder and cook until fragrant.

  6. Add in the flour and stir for 1 minute.

  7. Slowly pour in the stock, stirring as you go.

  8. Add in the sugar and season with the salt and pepper. Cook for a few minutes.

  9. Add in the rest of the veggies and simmer for 5 minutes or until the sauce thickens.

  10. Serve over mash potato or rice.
