Curried Sausage
GF + DF - serves 4
500g GF sausages, sliced
1/2 onion, finely diced
2 garlic cloves, grated
1 carrot, peeled and cut into half moons
1 cup sliced mushrooms
1 cup peas
1 tbsp curry powder (1/2 if kids don’t like it too strong)
3 tbsp GF flour
2 cups broth (beef or veg)
1 tsp coconut sugar
1/2 tsp salt
1/4 tsp black pepper
Mash potato or rice to serve
METHOD:
Add a splash of olive oil into a medium-low heated frypan.
Add the onion and garlic and saute for 1-2 mins.
Add in the sausages and brown.
Add in the carrots.
Add in the curry powder and cook until fragrant.
Add in the flour and stir for 1 minute.
Slowly pour in the stock, stirring as you go.
Add in the sugar and season with the salt and pepper. Cook for a few minutes.
Add in the rest of the veggies and simmer for 5 minutes or until the sauce thickens.
Serve over mash potato or rice.
