Baa Baa Burger with Sweet Potato Chips
INGREDIENTS:
500g Lamb mince
1 tbsp chopped mint
1 tbsp chopped parsley
1 large garlic clove, grated
Salt and pepper
1 large tomato diced
Cucumber, sliced
1 large beetroot, sliced
Spinach leaves
Herbed mayonnaise
Fresh mint leaves
2 sweet potato, peeled
Olive oil
1 tbsp dried rosemary
4 bread rolls (GF if needed)
METHOD:
Heat your oven to 180 degrees C. Line 2 trays with baking paper.
Cut the potato into chips and add to a bowl. Drizzle over 1 tbsp olive oil, season well with salt and sprinkle over the rosemary. Mix together and lay evenly out on the baking trays.
Place in the oven and bake for 30 minutes or until golden.
While this bakes, place the lamb mince, diced mint, parsley and garlic into a bowl. Season generously and mix together using your hands.
Shape mince into burger patties and place on a plate.
Heat a frypan to a medium-low heat and add a dash of olive oil. When heated, add the patties and cook 3-4 minutes each side or until golden and cooked through.
While this cooks, spread the mayo on each side of the rolls. Assemble the salad ingredients, and pattie once cooked.
Take out the chips and serve.
