Avocado and Feta Smash
INGREDIENTS:
1-2 slices of GF bread or sourdough (depending on size of bread)
1/2 ripe avocado
1 tbsp goats feta or regular feta (use vegan if needed)
1 small garlic clove, grated
1/2 tbsp lemon juice
Olive oil
Chilli flakes
METHOD:
Add the garlic into a small dish, pour over lemon juice, mix and set aside.
Add a splash of olive oil into a heated pan and toast each side of your bread. Alternatively you can just use a toaster if short on time.
Once cook, add the avocado onto your toast. Mash with a fork then pour over the garlic mixture.
Sprinkle over feta and chilli flakes.
Serve with a fried egg for protein (optional)
