Avocado and Feta Smash

INGREDIENTS:

  • 1-2 slices of GF bread or sourdough (depending on size of bread)

  • 1/2 ripe avocado

  • 1 tbsp goats feta or regular feta (use vegan if needed)

  • 1 small garlic clove, grated

  • 1/2 tbsp lemon juice

  • Olive oil

  • Chilli flakes

METHOD:

  1. Add the garlic into a small dish, pour over lemon juice, mix and set aside.

  2. Add a splash of olive oil into a heated pan and toast each side of your bread. Alternatively you can just use a toaster if short on time.

  3. Once cook, add the avocado onto your toast. Mash with a fork then pour over the garlic mixture.

  4. Sprinkle over feta and chilli flakes.

  5. Serve with a fried egg for protein (optional)
