Chilli Tuna Rice Cakes
INGREDIENTS:
3 rice cakes
1 small tin of tuna in spring water
1/4 avocado
1/2 tomato, diced
1/3 cup diced cucumber
1/2 cup lettuce, finely diced
Salt and pepper
2 tbsp mayonnaise
1/2 tsp sriracha sauce + extra to drizzle
Add feta if you would like
METHOD:
In a small bowl add all ingredients except the rice cakes and avocado. Season with salt and pepper and mix well.
Spread the avocado evenly over the rice cakes.
Scoop the tuna mix on top of the rice cakes. Enjoy!

*If taking to work for lunch, store tuna mix in an airtight container and assemble just before eating.
