Tuna Sushi

INGREDIENTS:

  • 1 cup sushi rice

  • 2 cups water

FILLING:

  • 425g tuna chunks in springwater

  • 1/4 cup mayonnaise

  • 1 small carrot grated

  • 1 lebanese cucumber, sliced

  • 1 avocado, sliced

  • 1 spring onion, sliced

  • 4 nori sheets

  • Tamari to serve

METHOD:

  1. Cook rice to packet instructions. Let cool so you can assemble.

  2. While the rice cooks, add the tuna and mayonnaise into a bowl and mix together.

  3. Once the rice is cool enough, place the nori sheet shiny side down on the bamboo mat.

  4. Apply a thin layer of rice leaving a couple centimeters top and bottom.

  5. Now assemble all the ingredients by placing them in a horizontal line 1/4 way up from the bottom.

  6. Carefully start to roll up from the bottom, tucking in as you go.

  7. When you get to the end leave a small clear space on the nori sheet. Wet your finger and wet along the end. Now roll to the end.

  8. Slice and enjoy by dipping in a little tamari.
