Pulled Pork Tacos
INGREDIENTS:
1.2kg boneless pork shoulder, fat trimmed
1 tbsp oregano
1 1/2 tsp salt
1 tsp cumin
1 tsp coriander
2 tbsp olive oil
2 cups beef stock
1 tsp apple cider vinegar
1 small onion, sliced
2 large garlic cloves, crushed
GF tortillas
SLAW:
1 small carrot, grated
1 cup red cabbage, sliced
1 cup lettuce, sliced
1/3 cup coriander, chopped
Juice 1/2 lime
GF + DF - serves 6
METHOD:
In a bowl add the oregano, cumin, coriander, salt and olive oil and mix together.
Rub all over the pork and let marinade for as long as you can (overnight is best).
Add in all the other ingredients except the pork (and wraps) into the slow cooker and stir.
Brown the pork and add to the slow cooker.
Cook on low for 6-8 hours.
Before you are ready to eat, add all the slaw ingredients into a bowl and mix.
Remove pork from slow cooker and shred.
Assemble and enjoy!
