Easy Peasy Veggie Paella

GF, DF + VE - serves 5-6

- Great for lunches

- Can add protein (chicken or chickpeas)

INGREDIENTS:

  • 1 small onion, finely diced

  • 3 garlic cloves, finely diced

  • 1 medium red capsicum, sliced

  • 1 cup peas (I used frozen)

  • 250g cherry tomatoes, halved

  • 4 cups vegetable stock

  • 2 tsp smoked or sweet paprika (depending on what you prefer)

  • 1 tsp thyme

  • Crack of black pepper

  • 2 tbsp olive oil

  • 1 1/2 cups of arborio rice

  • Lemon juice and parsley to serve

METHOD:

  1. Add 1 tbsp of olive oil to a heated frypan. Add the onion and capsicum to the pan and saute for 3 minutes.

  2. Now, add in the garlic, paprika and thyme and saute for a further 2 minutes.

  3. Add the rice and the other tbsp of olive oil. Mix coating the rice in the oil and vegetable mixture. Cook the rice for a couple minutes.

  4. Slowly add in the stock, salt and pepper and bring to a simmer.

  5. Cook for 20 minutes or until the rice is cooked. Stir occasionally.

  6. With 5 minutes to go, add in the tomatoes and peas.

  7. Serve with a squeeze of lemon juice and some fresh parsley.
