Easy Peasy Veggie Paella
GF, DF + VE - serves 5-6
- Great for lunches
- Can add protein (chicken or chickpeas)
INGREDIENTS:
1 small onion, finely diced
3 garlic cloves, finely diced
1 medium red capsicum, sliced
1 cup peas (I used frozen)
250g cherry tomatoes, halved
4 cups vegetable stock
2 tsp smoked or sweet paprika (depending on what you prefer)
1 tsp thyme
Crack of black pepper
2 tbsp olive oil
1 1/2 cups of arborio rice
Lemon juice and parsley to serve
METHOD:
Add 1 tbsp of olive oil to a heated frypan. Add the onion and capsicum to the pan and saute for 3 minutes.
Now, add in the garlic, paprika and thyme and saute for a further 2 minutes.
Add the rice and the other tbsp of olive oil. Mix coating the rice in the oil and vegetable mixture. Cook the rice for a couple minutes.
Slowly add in the stock, salt and pepper and bring to a simmer.
Cook for 20 minutes or until the rice is cooked. Stir occasionally.
With 5 minutes to go, add in the tomatoes and peas.
Serve with a squeeze of lemon juice and some fresh parsley.
