Boujee Eggs on Toast

INGREDIENTS:

  • 2 eggs

  • 1-2 slices sourdough, GF if needed

    (2 slices if bread is small)

  • Small handful rocket or spinach

  • 1/2 tomato, sliced

  • 1/4 avocado, sliced

  • 1 tbsp goats feta

  • Salt and pepper

  • Dill to top (optional)

METHOD:

  1. Cook your eggs the way you like (I did sunny side up).

  2. While this cooks, toast your bread.

  3. Once your toast is done, spread over half of the avocado onto the toast.

  4. Spread over the rocket and sliced tomato.

  5. Once the eggs are cooked, place on top and season with salt and pepper.

  6. Sprinkle over the goats cheese, dill, and the rest of the avocado.
