Hulk Pancakes
INGREDIENTS:
1 medium ripe banana
1 egg
1/4 tsp cinnamon
2 tbsp buckwheat flour (or plain)
1 small handful of spinach leaves
Coconut yogurt and berries to serve
*I like to cook these in ghee
METHOD:
Add all ingredients into a blender and blitz until smooth.
Add a teaspoon of ghee or olive oil to a heated frypan and pour mixture in to make pancakes.
Cook each side until golden.
Serve with coconut yoghurt and berries.
- Great for lunch boxes or snacks
