Hulk Pancakes

INGREDIENTS:

  • 1 medium ripe banana

  • 1 egg

  • 1/4 tsp cinnamon

  • 2 tbsp buckwheat flour (or plain)

  • 1 small handful of spinach leaves

  • Coconut yogurt and berries to serve

    *I like to cook these in ghee

METHOD:

  1. Add all ingredients into a blender and blitz until smooth.

  2. Add a teaspoon of ghee or olive oil to a heated frypan and pour mixture in to make pancakes.

  3. Cook each side until golden.

  4. Serve with coconut yoghurt and berries.

- Great for lunch boxes or snacks
