Oat and Raisin Cookies

GF, DF + V - makes 12-14

- Can be frozen in ziploc bags

- Lunchbox friendly

INGREDIENTS:

  • 1 1/2 cups of rolled oats (GF if needed)

  • 1 cup almond meal or GF flour to make lunch box friendly (nut free)

  • 1/3 cup coconut sugar

  • 1 tsp cinnamon

  • 1/4 tsp salt

  • 1 tsp baking powder

  • 1/2 cup coconut oil, melted

  • 1 egg (room temp)

  • 1 tsp vanilla extract

  • 3/4 cup raisins or sultanas

METHOD:

  1. Preheat your oven to 180 degrees C and line 2 baking trays.

  2. In a large mixing bowl add all the dry ingredients and mix together.

  3. In a separate bowl add the coconut oil and sugar and whisk together.

  4. Add in the egg and vanilla extract and whisk again.

  5. Pour the wet into the dry and fold through using a spatula.

  6. Cover and place in the fridge to set for 30 mins.

  7. Scoop out around 1 1/2 tbsp of mixture and roll into a ball and place on the baking paper. Gently press down and repeat with remaining batter.

  8. Bake for around 12 minutes or until golden.

  9. Let cool on tray.

  10. Store in a cool dry place or in the fridge.
