Zucchini Slice

INGREDIENTS:

  • 2 large zucchini, grated (using paper towel, squeeze out excess moisture)

  • 2 cups sliced mushroom

  • 2 spring onions, finely chopped

  • 1/4 cup finely chopped mixed herbs (I like parsley, basil and dill)

  • 1 tbsp nutritional yeast

    (or 1/4 cup feta)

  • 1 cup almond flour

  • 1/2 tsp baking powder

  • 1/4 cup almond milk

  • 5 eggs

  • 1 tomato, sliced

  • Salt and pepper

METHOD:

  1. Preheat your oven to 180 degrees C and line a slice tin with baking paper.

  2. In a medium bowl, add the almond flour, baking powder and nutritional yeast.

  3. In a separate bowl add the eggs, milk and whisk together.

  4. Now add in the herbs, zucchini, mushroom, spring onion and a good pinch of salt and pepper. Whisk well.

  5. Pour the wet ingredients into the dry and mix together.

  6. Pour into the prepared tin and add sliced tomato.

  7. Bake in the oven for 25-30 minutes.

  8. Remove and let cool slightly before cutting.

- Will keep in the fridge for a couple days. Reheat as needed.
