Cherry Ripe Bliss Balls

6 medjool dates, pitted
1 cup desiccated coconut
1 cup fresh cherries, pitted
1/4 cup melted coconut oil
1 tsp vanilla bean paste
200g DF dark chocolate
2 tsp coconut oil
METHOD:
Add dates, cherries, coconut, 1/3 cup coconut oil and vanilla extract into a food processor and blitz.
The mixture will be moist so slightly wet your hands and roll into balls.
Heat the chocolate and coconut oil in a heat proof bowl over a saucepan of water. Mix until smooth.
Coat the balls in the chocolate.
Place on a plate in the fridge for 1 hour to set.
Store in an airtight container in the fridge for up to 5 days
