Beef + Vegetable Skewers

GF + DF - serves 4

INGREDIENTS:

MARINADE:

  • 500g rump steak, diced into around 3 cm chunks

  • 3 tbsp olive oil

  • 2 tsp paprika

  • 1 tsp dried rosemary 

  • 1/2 tsp salt

  • 1 large garlic clove, grated 

  • Zest of 1 lemon

  • 1 red capsicum, diced into chunks 

  • 250g cherry tomatoes 

  • 1/2 red onion, halved and layers peeled

  • 1 zucchini cut into 1.5cm thick

  • 12 button mushrooms, halved

  • Serve with lemon wedge and rice

METHOD:

  1. Add beef and marinade ingredients into a bowl and mix well ensuring beef is coated in marinade. Cover and refrigerate over overnight or for 30 minutes.

  2. Assemble beef skewers adding both vegetables and beef.

  3. Heat a frypan to a medium-high heat and spray with oil.

  4. Add skewers 3-4 at a time cooking each side until beef is cooked through and golden.

    *Eat on their own or add rice.

 

- Marinade the meat the night before.

- Prep vegetables the day before.
