Smoked Salmon Salad

INGREDIENTS:

  • 8 small potatoes quartered

  • 150g smoked salmon

  • 250g cherry tomatoes, halved

  • 1 cup peas, thawed if frozen

  • 1/3 cup GF mayonnaise 

  • 1 tbsp lemon juice

  • Salt and pepper

  • 2 tbsp finely chopped chives

  • 2 cups chopped spinach 

METHOD:

  1. Boil the potatoes in salted water until soft. Drain and let cool.

  2. Once cooled, add all ingredients into a large bowl and mix together.
