Smoked Salmon Salad
INGREDIENTS:
8 small potatoes quartered
150g smoked salmon
250g cherry tomatoes, halved
1 cup peas, thawed if frozen
1/3 cup GF mayonnaise
1 tbsp lemon juice
Salt and pepper
2 tbsp finely chopped chives
2 cups chopped spinach
METHOD:
Boil the potatoes in salted water until soft. Drain and let cool.
Once cooled, add all ingredients into a large bowl and mix together.
