Creamy Avo Carbonara

INGREDIENTS:

  • 300g GF fettuccine pasta

  • 1/2 onion, diced

  • 2 garlic cloves

  • Olive oil 

  • 4 rashers bacon, diced

  • 1 zucchini, sliced

  • 2 cups sliced mushroom

  • 1/2 tsp thyme 

SAUCE:

  • 1 large ripe avocado

  • 1 egg

  • 2 tbsp lemon juice

  • 2 tbsp nutritional yeast 

  • 3 tbsp almond or oat milk

  • 1/2 tbsp chopped parsley 

  • 1/2 tsp thyme

  • 1/2 tsp salt

  • 1/4 tsp pepper

METHOD:

  1. In a low-medium heated frypan, add a splash of olive oil and add the onion and garlic. Saute for around 30 seconds.

  2. Add in the garlic and cook for another minute.

  3. While this cooks start cooking your pasta according to the packet instructions.

  4. Add in the zucchini, mushrooms and thyme with a pinch of salt. Cook stirring occasionally for 5 minutes.

  5. While this cooks add all the sauce ingredients into a blender and blitz until smooth and creamy.

  6. When the pasta is done take off the heat and drain.

  7. Now pour the sauce into the frypan and take off the heat while you stir it through.

  8. Add the pasta and mix well. Serve immediately.
