Sunday Frittata

INGREDIENTS:

  • 8 eggs, whisked

  • 1/4 cup plant based milk (or cows)

  • 2 tbsp nutritional yeast (can also use 1/4 cup feta here)

  • Salt and pepper

  • 1/4 fresh herbs, finely chopped (I used basil, parsley and dill)

  • 1 bunch asparagus, ends trimmed

  • 1 small zucchini, diced

  • 1 medium sweet potato, diced

  • 1 tomato, sliced

  • 1/2 red onion, diced

METHOD:

  1. Pre heat your oven to 180 degrees C and grease a pie dish.

  2. Fry off the onion and veggies in a drizzle of olive oil for around 6 minutes or until slightly softened.

  3. While this cooks, add the eggs, herbs, milk, nutritional yeast and a good crack of salt and pepper into a bowl and whisk together.

  4. Once the veggies are done, evenly spread them out in the dish.

  5. Pour over the egg mixture and bake for 30 minutes or until cooked.
