Sunday Frittata
INGREDIENTS:
8 eggs, whisked
1/4 cup plant based milk (or cows)
2 tbsp nutritional yeast (can also use 1/4 cup feta here)
Salt and pepper
1/4 fresh herbs, finely chopped (I used basil, parsley and dill)
1 bunch asparagus, ends trimmed
1 small zucchini, diced
1 medium sweet potato, diced
1 tomato, sliced
1/2 red onion, diced
GF, DF + V -serves 4
METHOD:
Pre heat your oven to 180 degrees C and grease a pie dish.
Fry off the onion and veggies in a drizzle of olive oil for around 6 minutes or until slightly softened.
While this cooks, add the eggs, herbs, milk, nutritional yeast and a good crack of salt and pepper into a bowl and whisk together.
Once the veggies are done, evenly spread them out in the dish.
Pour over the egg mixture and bake for 30 minutes or until cooked.
