Falafel Pockets with Tzatziki

GF, DF + VE - serves 4

INGREDIENTS:

  • 1 packet of GF falafels 225g

  • 1 large tomato, diced

  • 1 1/2 cups cucumber, diced

  • 1 tbsp finely diced red onion

  • Small handful fresh mint leaves, chopped

  • 1 tbsp lemon

  • Lettuce, chopped (around 3 cups)

  • 4 GF pita pockets

TZATZIKI:

  • 1/2 cup coconut yoghurt

  • 1/3 cup diced cucumber

  • 3 fresh mint leaves

  • 3/4 tbsp dill, finely chopped

  • 1 garlic clove

  • 1/2 tbsp lemon juice

  • Salt and pepper to taste

METHOD:

  1. Add the lettuce, tomato, cucumber, mint, onion and lemon juice in a bowl and mix together. Set aside.

  2. Now add all the tzatziki ingredients into a blender and blitz together.

  3. Heat your falafels.

  4. Now assemble your falafels and drizzle over the tzatziki.
