Falafel Pockets with Tzatziki
GF, DF + VE - serves 4
INGREDIENTS:
1 packet of GF falafels 225g
1 large tomato, diced
1 1/2 cups cucumber, diced
1 tbsp finely diced red onion
Small handful fresh mint leaves, chopped
1 tbsp lemon
Lettuce, chopped (around 3 cups)
4 GF pita pockets
TZATZIKI:
1/2 cup coconut yoghurt
1/3 cup diced cucumber
3 fresh mint leaves
3/4 tbsp dill, finely chopped
1 garlic clove
1/2 tbsp lemon juice
Salt and pepper to taste
METHOD:
Add the lettuce, tomato, cucumber, mint, onion and lemon juice in a bowl and mix together. Set aside.
Now add all the tzatziki ingredients into a blender and blitz together.
Heat your falafels.
Now assemble your falafels and drizzle over the tzatziki.
