Honey Mustard Chicken

INGREDIENTS:

  • 2 chicken breasts, diced

    (works well with chickpeas too)

  • 1 small onion, finely diced

  • 2 garlic cloves, finely diced

  • 1 large carrot, diced

  • 1 medium head of broccoli,

    florets cut

  • 1 tbsp dijon mustard

  • 1/2 tbsp whole grain mustard

  • 1 tbsp honey

  • 1/2 cup coconut milk

  • Salt and pepper

  • 1 1/2 cups rice

METHOD:

  1. In a low-medium heated frypan, add a drizzle of olive oil, onion and garlic and cook for 2 minutes.

  2. Now add in the chicken, season lightly with salt and pepper and cook until the chicken

    has browned.

  3. Add in the veggies, mustards, honey and coconut milk and bring to a simmer.

  4. Place the lid on and reduce the heat to a low simmer for around 10 minutes.

  5. While this cooks, cook the rice according to packet instructions.

  6. Taste and season accordingly.
