Honey Mustard Chicken
INGREDIENTS:
2 chicken breasts, diced
(works well with chickpeas too)
1 small onion, finely diced
2 garlic cloves, finely diced
1 large carrot, diced
1 medium head of broccoli,
florets cut
1 tbsp dijon mustard
1/2 tbsp whole grain mustard
1 tbsp honey
1/2 cup coconut milk
Salt and pepper
1 1/2 cups rice
METHOD:
In a low-medium heated frypan, add a drizzle of olive oil, onion and garlic and cook for 2 minutes.
Now add in the chicken, season lightly with salt and pepper and cook until the chicken
has browned.
Add in the veggies, mustards, honey and coconut milk and bring to a simmer.
Place the lid on and reduce the heat to a low simmer for around 10 minutes.
While this cooks, cook the rice according to packet instructions.
Taste and season accordingly.
