Baked Breaky Banana Bread

GF*, DF + V - serves 1

INGREDIENTS:

  • 1 medium banana

  • 1 egg

  • 1 tbsp melted coconut oil

  • 1/4 tsp vanilla extract

  • 2 tsp honey or maple syrup

  • 1/2 tsp ACV

  • 1/2 cup oat flour, GF* if needed

    (blitz oats until a flour)

  • 1/4 tsp cinnamon

  • 1/4 tsp baking powder

  • Pinch of salt

  • Coconut yoghurt and walnuts to serve

METHOD:

  1. Preheat your oven to 170 degrees C and grease a ramekin.

  2. In a bowl mash the banana. Add in the egg, vanilla, honey, ACV, coconut oil and whisk together.

  3. In a separate bowl add all the dry ingredients and mix together.

  4. Pour the wet ingredients into the dry and mix together.

  5. Pour into the ramekin and bake for around 20 minutes.

  6. Top with coconut yoghurt and walnuts.

Make double batch and heat up the next day.
