(Hidden Veg) Turkey Rissoles

INGREDIENTS:

  • 500g Turkey breast mince

  • 1/2 cup grated carrot

  • 1/2 cup grated zucchini (squeeze out excess liquid)

  • 1/2 tsp grated ginger

  • 1 garlic clove, minced

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1 spring onion finely diced (optional)

METHOD:

  1. In a mixing bowl add all the ingredients and mix together with your hands.

  2. Roll into 10 golf ball size balls.

  3. Add a splash of olive oil to a medium-low heated frypan.

  4. Add the rissoles flattening them down as they go in.

  5. Cook for around 6 minutes each side or until golden and cooked through.
