(Hidden Veg) Turkey Rissoles
INGREDIENTS:
500g Turkey breast mince
1/2 cup grated carrot
1/2 cup grated zucchini (squeeze out excess liquid)
1/2 tsp grated ginger
1 garlic clove, minced
1/4 tsp salt
1/4 tsp pepper
1 spring onion finely diced (optional)
METHOD:
In a mixing bowl add all the ingredients and mix together with your hands.
Roll into 10 golf ball size balls.
Add a splash of olive oil to a medium-low heated frypan.
Add the rissoles flattening them down as they go in.
Cook for around 6 minutes each side or until golden and cooked through.
