Crispy Golden Potatoes

GF, DF, VE - side dish

INGREDIENTS:

  • 5 medium new potatoes (the small ones)

  • 1 1/2 tbsp olive oil

  • 1/2 tbsp nutritional yeast (can buy this at the supermarket)

  • 1/4 tsp salt

  • 1 tsp dried rosemary

METHOD:

  1. Preheat your oven to 190 degrees C and line a baking tray with paper.

  2. In a pot of boiling salted water, add the potatoes and boil for around 10 minutes or until soft but tender.

  3. Once cooked, drain the water from the pot.

  4. Add in the oil, salt, nutritional yeast and rosemary.

  5. Place the lid back on and shake vigorously until they start to break up.

  6. Place on the baking tray and back for 20 minutes or until golden and crunchy.
