Lemon Pepper Chicken
GF + DF - serves 4
INGREDIENTS:
2 chicken breasts cut into strips
1/4 cup buckwheat flour or plain flour
1/2 tsp salt
1/2 tsp black pepper
1 tbsp parsley, finely chopped
Zest of 1 lemon
2 garlic cloves, minced
1 tbsp olive oil
1 medium head of broccoli florets
1 medium zucchini cut into quarters
1 cup jasmine rice
SAUCE:
1 tbsp olive oil
2 tbsp lemon juice
1/4 tsp black pepper
Pinch of salt
METHOD:
In a saucepan with a steamer attachment. cook your rice according to packets instructions.
While the rice cooks add the flour, salt, pepper, lemon zest and parsley into a mixing bowl and mix together.
Add the chicken strips ensuring each strip is fully coated in the flour mixture.
Heat a frypan to a medium heat. Add 1 tbsp of olive oil and the garlic, saute for 30 seconds before adding the chicken.
Add the broccoli and zucchini to the steamer attachment and cook until soft but slightly tender.
Turn the frypan down slightly and add the sauce. Cook the chicken until golden and cooked through.
Now add the broccoli and zucchini to the pan to soak up some of the flavour.
Serve your rice and top with the vegetables and chicken. Give an extra squeeze of lemon on top.
