Sweet Potato Toast
GF, DF, V + RSF - serves 4
Ingredients:
2 medium sweet potatoes cut around 1 cm thick or just less
1 can chickpeas
1 tsp smoked paprika
Salt and pepper
1 lebanese cucumber diced
1/2 cup cherry tomatoes diced
1/4 red onion sliced
Fresh coriander
Squeeze of lemon juice
1 avocado sliced
Method:
In a heated frypan add a splash of olive oil, the chickpeas, smoked paprika and a pinch of salt. Stir and let cook.
While this cooks add your sweet potato toast to your toaster and toast on high. Turning each time it pops up. Time will depend on the strength of your toaster. Essentially you want it to be cooked but still hold it’s shape.
While this cooks add all your topping ingredients except the avocado into a bowl and set aside.
Once your toast is done add the sliced avocado and add your toppings and finally your chickpeas. I like to sprinkle over a little more salt and pepper before serving.
You could add whatever toppings you like, even peanut butter and banana, yum!
