Lentil + Mushroom Winter Nourish Bowl

GF, DF, V + RSF - Serves 2

Ingredients:

  • 1 can organic brown lentils

  • 1 medium sweet potato peeled and diced 2x2 cm

  • Olive oil

  • 1/4 tsp cinnamon

  • 1 cup sliced mushrooms

  • 1 small eggplant diced into cube 2x2 cm

  • 1 tsp rosemary

  • 1 tsp thyme

  • Sale and pepper

  • 1 bunch of kale (or spinach)

Basil tahini dressing:

  • 1/4 cup water

  • 1/4 cup tahini

  • 1/4 EVO

  • 1/4 cup basil

  • 1 large garlic clove

  • Juice of 1/2 lemon

  • 1 tbsp raw honey

  • Salt and pepper

Method:

  1. In a heated frypan add 1 tbsp olive oil, sweet potato and cinnamon.

  2. Cook the sweet potato for around 10 minutes.

  3. Meanwhile add all your dressing ingredients into a blender and blitz until smooth. Set aside.

  4. After 10 minutes add in the eggplant, thyme and rosemary and cook for 5 minutes.

  5. Now add in your mushroom, kale and lentils and a good pinch of salt and pepper cooking for a further 3 minutes.

  6. Once done toss through the tomato and divide between bowls.

  7. Drizzle over your yummy dressing and enjoy!
