Herbed Turkey Meatball Salad with Creamy Basil Dressing
GF, DF + RSF - serves 4
Ingredients:
500g Turkey mince
1 tbsp grated ginger
1 grated garlic clove
1/4 cup chopped basil
1/4 cup chopped coriander
Zest of 1 lemon
1 spring onion finely chopped
Salt and pepper
Salad:
1 head of cos lettuce
2 tomatoes diced
2 lebanese cucumber diced
1/2 red onion sliced
Creamy basil dressing:
1/2 cup fresh basil
1/2 cup cashews (or sunflower seeds)
1 garlic clove
1/2 cup almond milk
2 tbsp lemon juice
Salt and pepper
Method:
In a bowl add in all your meatball ingredients and mix well using your hands. Roll mixture into small balls and place on a plate.
Add a splash of olive oil into a frypan and heat it to a medium temperature.
Add the meatballs and cook for around 10-15 minutes turning occasionally until they are cooked and golden.
While this cook, add all your dressing ingredients into a blender and blitz until creamy and smooth. Set aside.
Chop your lettuce and scatter over a big serving plate. Top with the tomato, cucumber and red onion.
Once meatballs are cooked add them onto the platter and top with that yummy dressing.
