Greek Gyros

GF, DF + RSF

Ingredients:

Marinade:

  • 1/8 cup olive oil

  • 1/2 tbsp balsamic vinegar

  • 1 tsp smoked paprika

  • 1 tsp ground cumin

  • 2 tsp oregano

  • 1/4 tsp salt

  • 1/4 tsp onion powder

  • 2 garlic cloves grated

Gyros:

  • 2 chicken breasts sliced

  • 1 medium sweet potato

  • 1 tsp rosemary

  • Olive oil

  • Cos lettuce

  • 1 tomato sliced

  • 1/4 red onion sliced

  • GF wraps

Tzatziki:

  • 1 lebanese cucumber deseeded and discarded

  • 1 garlic clove

  • 1/4 cup dill

  • Juice of 1/2 lemon

  • 1/2 cup coconut sour cream/greek yoghurt

  • Pinch of salt and pepper

Method:

  1. Pre heat your oven to 180 degrees C and line a baking tray.

  2. While this heats mix all your marinade ingredients into a bowl and add the sliced chicken. Set aside.

  3. Peel your sweet potato and cut into chips. Place on the baking tray, drizzle with a little coconut oil or olive oil, sprinkle with the rosemary and a pinch of salt and bake for around 25 minutes or until cooked and golden.

  4. While this cooks, add your tzatziki ingredients into a blender and blitz together. Pour into a bowl for serving and set aside.

  5. Cut up your fresh salad ingredients: cos lettuce, tomato and red onion and place on a serving tray.

  6. Now you can cook your chicken. Place chicken in a heated fry pan and cook until golden.

  7. Place on the serving tray along with the wraps and tzatziki.

  8. Once your chips are done add them to the plate and serve.
