Black bean and Beet Burgers

GF, DF, V + RSF - serves 4

Ingredients:

  • 1 can organic black beans rinsed

  • 80g cooked beetroot

  • 1/4 onion diced

  • 1 garlic clove grated

  • 1/2 tsp cumin

  • 1/2 tsp coriander

  • 1/2 tsp garam masala

  • 2 tsp coconut aminos

  • Salt and pepper

  • 2 tbsp buckwheat flour

  • olive oil

  • Lettuce of choice

  • 2 sliced tomatoes

  • Cucumber slices (around 1 lebanese cucumber)

  • Either cashew aioli or guacamole to serve

  • GF or Spelt buns/bread

Method:

  1. In a heated frypan add a splash of olive oil, the onion, garlic and spices and saute for 3 minutes.

  2. Now add in your black beans, coconut aminos and beetroot and cook for another 2 minutes.

  3. Once done add all of the black bean mixture in a blender and blitz (leaving a little chunky)

  4. Sift in the buckwheat flour and mix in.

  5. Once the mixture has cooled slightly, scoop some out using a spoon and shape into burgers.

  6. Add a little oil to your frypan and cook the burgers for around 4 minutes each side or until golden.

  7. While these cook prep your salad ingredients.

  8. Once your patties are cooked you can assemble your burgers and add either the cashew aioli or guacamole.
