Honey Garlic Chicken
GF, DF and RSF - serves 4
Ingredients:
2 large chicken breasts diced
1/4 cup arrowroot flour/corn starch
100g green beans, ends trimmed
1 head of broccoli
1 large carrot cut into discs
1 1/2 cups jasmine rice
Sauce:
1/4 cup raw honey
1/2 cup vegetable stock
2 garlic cloves grated
1 tbsp tamari
1 tsp apple cider vinegar
1 tbsp arrowroot flour
1 tbsp sesame seeds
1/2 tsp sesame oil
Method:
In a bowl add all your sauce ingredients and whisk. Set aside
Heat a frypan to a low-medium heat and add 2 tbsp of your sauce and add your vegetables. Cook for around 6 minutes stirring occasionally.
While this cooks add your rice and required water to a pot and cook to instructions.
Now add your arrowroot flour, a good pinch of salt and pepper to a bowl and mix. Add in your diced chicken and mix coating them evenly in the flour. Set aside.
Once your veggies are done add to a clean bowl and set aside.
Now add a splash of olive oil to the pan and add your chicken. Add the remaining of the sauce and cook the chicken until it’s nice and golden and cooked through.
Serve with your rice.
