Veg Frittata
GF, DF, V + RSF - serves 4
Ingredients:
8 eggs
1/4 cup almond milk
1/4 cup chopped chives
1/4 cup chopped dill
Salt and pepper
1 bunch broccolini ends trimmed
1 medium sweet potato diced
2 spring onion diced
1 red capsicum diced
1 tomato (4 slices and the rest diced)
Method:
Preheat your oven to 180 degrees C and grease a pie dish.
Add some water to a medium pot and bring to the boil. Add your sweet potato and cook for 5 minutes.
Once done, drain water and place in the pie dish along with the broccolini, diced tomato, spring onion and capsicum. Mix together.
In a bowl add your eggs, milk, dill, chives and a good pinch of salt and pepper and whisk together.
Pour the egg mixture evenly all over your vegetables.
Top with sliced tomato and place in the oven.
Bake for around 40-45 minutes or until cooked.
This is a lighter meal. Add a slice of sourdough if needed.
