Loaded Burritos

GF*, DF, V + RSF - Serves 4

Ingredients:

  • GF wraps or large lettuce leaves

  • 1 can black beans rinsed

  • 1 garlic clove

  • 1 tsp paprika

  • 1 red capsicum sliced

  • 2 cups shredded red cabbage

  • 1 large carrot grated

  • 1 corn cob

  • Sprouts

  • 1 lebanese cucumber sliced

  • 1 avocado

  • 1/4 red onion diced

  • 1 Lime

  • 1 cup rice

Method:

  1. Get 2 saucepans one with water bringing it to the boil and adding your corn.

  2. Add your rice to the remaining pot with required water and bring to the boil and cook accordingly.

  3. Meanwhile prep your veggies, slicing and dicing as needed. Place on a large plate and set aside

  4. In a bowl add your avocado and mash with a fork. Add in the diced onion, juice of 1/2 lime and season with salt and pepper. Set aside.

  5. Add a splash of olive oil to a heated frypan and add in the black beans, 1 tsp smoked paprika and the grated the garlic. Stir and let cook for 5 minutes.

  6. Your corn should be done now so carefully drain the water and slice off the kernels placing them on the plate with the rest of your veg.

  7. Once your rice and beans are done you are ready to assemble. Simply add your ingredients with a big dollop of that guacamole to the middle of your preferred wrap, tuck and roll. Enjoy!
