Healthy Nachos

GF, DF, V and RSF - Serves 4

Ingredients:

  • 500g lean grass fed beef mince or 2 cans brown lentils rinsed

  • 80g tomato paste

  • 1 tsp smoked paprika

  • 1/2 tsp ground cumin

  • 1 tsp Italian herbs

  • Salt and pepper

  • 1 packet of organic corn chips (no added salt)

  • 1/2 cup coconut sour cream/greek yoghurt

  • Fresh coriander to serve

Salsa:

  • 1 tomato diced

  • 1 Lebanese cucumber diced

  • 1/2 red onion diced

  • 1 avocado diced

  • 1 tbsp lime juice

  • Salt and pepper

Method:

  1. Heat a frypan to low-medium heat and add 1 tbsp olive oil, the smoked paprika, italian herbs, cumin and tomato paste and stir cooking for 3 minutes.

  2. Add in your beef mince, salt and pepper and break up with a wooden spoon cooking until meat is browned.

  3. While this cooks place all your salsa ingredients into a bowls and mix.

  4. Once the beef mince/lentils is cooked, divide amongst 4 bowls, top with the salsa, fresh coriander, yoghurt and corn chips.
