Healthy Nachos
GF, DF, V and RSF - Serves 4
Ingredients:
500g lean grass fed beef mince or 2 cans brown lentils rinsed
80g tomato paste
1 tsp smoked paprika
1/2 tsp ground cumin
1 tsp Italian herbs
Salt and pepper
1 packet of organic corn chips (no added salt)
1/2 cup coconut sour cream/greek yoghurt
Fresh coriander to serve
Salsa:
1 tomato diced
1 Lebanese cucumber diced
1/2 red onion diced
1 avocado diced
1 tbsp lime juice
Salt and pepper
Method:
Heat a frypan to low-medium heat and add 1 tbsp olive oil, the smoked paprika, italian herbs, cumin and tomato paste and stir cooking for 3 minutes.
Add in your beef mince, salt and pepper and break up with a wooden spoon cooking until meat is browned.
While this cooks place all your salsa ingredients into a bowls and mix.
Once the beef mince/lentils is cooked, divide amongst 4 bowls, top with the salsa, fresh coriander, yoghurt and corn chips.
