Beef Madras

GF, DF + RSF - serves 4

Ingredients:

  • 700g casserole beef diced

  • 2 cups diced pumpkin

  • 1 1/2 cup sliced mushrooms

  • 1 tin of diced tomatoes

  • 2 tbsp ground coriander

  • 1 tbsp garam masala

  • 1 tsp fresh grated ginger

  • 2 tbsp tomato paste

  • 1 tbsp lemon juice

  • 1 cup vegetable stock

  • 1/4 cup coconut ‘sour cream’ or greek yoghurt

  • Salt and pepper

  • 1 cup of brown basmati rice

Method:

  • In a heated frypan add 1 tbsp olive oil and start cooking your beef in 2 batches until browned.

  • While this cooks cook your rice to packet instructions.

  • Once your beef is cooked set aside, leaving some of the juices in the pan.

  • Now add your pumpkin, mushrooms, spices and tomato paste. Stir cooking for a couple minutes.

  • Add in your stock, lemon juice, salt and pepper and cook for a further 5-8 minutes.

  • Now add your beef back in and cook for another 4 minutes.

  • Add your coconut sour cream/yoghurt and stir through. Turn off the heat.

  • Add your rice to 4 bowls and top with the curry.
