Beef Madras
GF, DF + RSF - serves 4
Ingredients:
700g casserole beef diced
2 cups diced pumpkin
1 1/2 cup sliced mushrooms
1 tin of diced tomatoes
2 tbsp ground coriander
1 tbsp garam masala
1 tsp fresh grated ginger
2 tbsp tomato paste
1 tbsp lemon juice
1 cup vegetable stock
1/4 cup coconut ‘sour cream’ or greek yoghurt
Salt and pepper
1 cup of brown basmati rice
Method:
In a heated frypan add 1 tbsp olive oil and start cooking your beef in 2 batches until browned.
While this cooks cook your rice to packet instructions.
Once your beef is cooked set aside, leaving some of the juices in the pan.
Now add your pumpkin, mushrooms, spices and tomato paste. Stir cooking for a couple minutes.
Add in your stock, lemon juice, salt and pepper and cook for a further 5-8 minutes.
Now add your beef back in and cook for another 4 minutes.
Add your coconut sour cream/yoghurt and stir through. Turn off the heat.
Add your rice to 4 bowls and top with the curry.
