Protein Pancakes

GF, DF, V and RSF - serves 1

Ingredients:

  • 1 ripe banana

  • 1 egg

  • 1 tbsp vanilla wholefood protein powder

  • 1/4 cup oats

  • 1/4 tsp baking powder

  • 1/2 tsp apple cider vinegar

  • Coconut yoghurt and berries to serve

Method:

  1. Heat a frypan and add a splash of coconut oil.

  2. While this heats add all your ingredients into a blender and blitz until smooth.

  3. Pour the batter into the pan creating round pancakes. Cook for a few minutes each side until golden.

  4. Remove and place on a plate and top with the yoghurt and berries.
