Carrot Cake

GF, DF, V and RSF

Ingredients:

  • 2 cups almond meal

  • 1/3 cup desiccated coconut

  • 2 tsp mixed spice

  • 1/3 cup coconut sugar

  • 1 tsp baking powder

  • 1/4 tsp pink salt

  • 1/2 cup crushed walnuts

  • 1/3 cup melted coconut oil

  • 1 tsp vanilla extract

  • 2 eggs whisked

  • 1/4 cup coconut or almond milk

  • 1/2 tsp apple cider vinegar

  • 1 carrot grated

Method:

  1. Preheat your oven to 180 degrees C and line a loaf tin.

  2. In a large bow add all your dry ingredients leaving some walnuts to top and mix well.

  3. In a seperate bowl add you wet ingredients mixing well.

  4. Add your wet ingredients into your dry and mix to combine.

  5. Pour your cake batter into your prepared loaf tin. Sprinkle with leftover walnuts and bake for 40-45 minutes or until a skewer comes out clean.

  6. Once cooked remove and let cool.
