PB Granola
GF, DF, V + RSF
Ingredients:
2 cups GF rolled oats
1 cup raw buckwheat kernels
1/2 cup desiccated coconut
1/2 cup sunflower seeds
1/2 pumpkin seeds
1/2 cup raw almonds + 1/2 cup raw cashews blitzed into chunks ( or any other nuts)
Pinch of pink salt
1/4 cup melted coconut oil
1/4 cup natural peanut butter
1/4 cup maple syrup
1 tsp vanilla extract
Method:
Preheat your oven to 180 degrees C and line 2 baking trays.
Add all your dry ingredients into a large bowl and mix well.
In a blender add the coconut oil, peanut butter, maple syrup and vanilla. Blitz until creamy.
Pour your wet ingredients into your dry and mix really well.
Spread your granola out onto the trays making sure they are evenly spread.
Place in the oven and bake for 10 - 15 minutes or until golden.
Remove and let cool on the tray before placing your granola in an airtight jar.
