Sweet Potato Salad

GF, DF, V and RSF - serves 4

Ingredients:

  • 1 large sweet potato

  • 1 large hawaian sweet potato (or regular)

  • 1 purple sweet potato (or regular)

  • 1/4 cup chopped chives

  • 1 cup of cashew aoli

Method:

  1. Peel and dice the sweet potato into 3x3 cm cubes.

  2. Add to a pot of boiling water and cook until soft but tender.

  3. Remove, drain and add to the frudge to cool in a bowl of cool water for 30 minutes.

  4. Once cooled, stir through the cashew aoli and chives.
