Sweet Potato Salad
GF, DF, V and RSF - serves 4
Ingredients:
1 large sweet potato
1 large hawaian sweet potato (or regular)
1 purple sweet potato (or regular)
1/4 cup chopped chives
1 cup of cashew aoli
Method:
Peel and dice the sweet potato into 3x3 cm cubes.
Add to a pot of boiling water and cook until soft but tender.
Remove, drain and add to the frudge to cool in a bowl of cool water for 30 minutes.
Once cooled, stir through the cashew aoli and chives.
